Apple Crumble

Raw Apple Crumble

This deliciouly warming dessert will remind you of happy days at Grandma's, using the apples from her tree and the aromatic spices that symbolise this dish. A super way to add some fruit in during winter and you'll never believe it's raw!

Crust
1 Cup Walnuts
1 Cup Pecans
½ Cup Medjool Dates
1 Teaspoon AllSpice
1 Teaspoon Vanilla Powder
Pinch of Salt

Process nuts with salt, allspice and vanilla then add dates slowly until mixture begins to fall away from the sides of the bowl.Place it in a deep rectangular dish (I use glass). Don't press it down much at all, leave it like a crumb. 

Filling
6 Medium Organic Apples
1 ½  cups of dates
1 cup raisins
1 Teaspoon Vanilla Powder
2 Teaspoons Apple Pie Spice* or Mixed Spice

Remove cores from apples, put all ingredients into a food processor and mix It will still have some chunks in it. Pour onto crumb.

Topping
1 ½ Cups of Cashews, Soaked
Juice of ½  lemon
4 Tablespoons Coconut Nectar
Water for consistency
Candied Walnuts*

Blend everything except the walnuts until smooth. Pour over filling and top with candied walnuts.

If you have a dehydrator, warm for 30 minutes or you can place in the oven on 50degC with the door open for the same time. It's great with a little icecream too!http://www.rawambition.com.au/raw/recipes/desserts/coconut-ice-cream Store in the fridge. It's also perfect for breakfast! 

*Candied Walnuts
1 Cup Walnuts soaked overnight
2 Tablespoons Coconut Nectar
1 teaspoon cinnamon
Pinch of Salt

Mix the drained walnuts with the nectar and salt, lay out on a dehydrator tray for 24-48 hours, until they become toffee like.
