Tomato Wraps
These wraps are the best way to use up surplus tomatoes, plus they are so light and refreshing to eat. The fresh tomato flavour with a hint of basil permeates your filling for a flavour explosion! The Inulin is used as a thickener and is also a wonderful addition for your gut health!
Ingredients
1 cup Sun dried Tomatoes (NOT in oil) - soaked for a couple of hours
2 cups fresh tomatoes
½ cup Fresh Basil
2 Tablespoons good quality Olive Oil
2 Tablespoons Inulin
Method:
Blend everything till smooth. Pour onto dehydrator sheets and place in dehydrator at 46degC (115F) over night. If you feel they have over dried, just leave them out for a few hours to soften up. They should peel easily from the sheet. Will store wrapped in baking paper in an airtight container for a few weeks.
