Broccoli, Kale Bonanza

A friend gave me the idea for broccoli in a salad and I absolutely love it! This is a super salad, full of nutritious ingredients, great any time of the year. I particularly like adding coriander in winter, but you can also use parsley. For me, I'd enjoy this on it's own with perhaps some onion bread, you may like to have it as a side dish with something else, but it's mighty filling and incredibly nourishing! 

Ingredients:
1 Head Broccoli
2 Cups Kale, torn from stem 
3 Spring Onions
1 Avocado
1 Cup Goji Berries
½ Cup Sunflower Seeds (sprouted even better!)
½ Cup Pumpkin Kernels
Zest of One Lemon
Juice of 3 Lemons
½ Cup Fresh Mint
½ Cup Fresh Coriander
¼ Cup Olive Oil
Splash Balsamic Vinegar
Pepper And Salt
 
Method:
Chop all the greens finely—you can do in batches with a food processor—and blend with the seeds and fruit. Pour over the liquids and add salt and pepper to taste.
