If you’re wanting something sweet and fresh (don’t we all!) on a balmy summers eve, you simply can’t go past a nice light berry mousse!
 
I’ve added raw coconut butter (the blended up flesh), you don’t have to, but it does make it really nice and creamy. You can also add the flesh of one coconut, or not, it's up to you! If you like it a little tangier, use fresh berries rather than frozen, or make layers with a fruit coulis (just fruit,coconut nectar and a squeeze of lemon)

I gave up dairy ice cream years ago, the minute I ate it, I would feel a coating in my throat and a kind of itchy feeling. My instincts told me this was not good! Coconut Ice-cream doesn’t pretend to be like the dairy deal, in fact, I think it’s better. It’s higher in fat but all good fats your body can use. I find it very satisfying so you don’t need to eat as much as you might of a dairy based one.

Spicy Carrot Cakes

Spicy Carrot Cakes
Who doesn’t love a delicious moist carrot cake! Well here’s a raw version that maximises the goodness!
 
Cake ingredients:
2 medium sized carrots
2 cups walnuts
½ cup raisins
½ cup dates
½ cup shredded coconut
2 teaspoons psyllium husk
2 teaspoons chia seed powder
2 tablespoons coconut nectar
1 teaspoon vanilla extract
1 teaspoon cinnamon powder
1 teaspoon ginger powder
Zest of ½ and orange

If you've a garden that grows mint like a weed in summer, get a hold of some for this refreshingly decadent  dessert! 
 
For the crust:
1 Cup Macadamias
½ cup Sprouted and Dried Buckwheat (you can substitute with Buckwheaties or more nuts)
½ Cup Coconut Crunch
¼ teaspoon Vanilla Sea Salt (or plain salt if preferred)
¼ teaspoon of Vanilla Bean Powder
1 Cup Dried Coconut
2 teaspoons Cacao Powder
1 Cup of Medjool Dates (stones removed)

This is a GREAT way to get a guilt free chocolate fix!
 
Ingredients:
1 Cup raw cashews, soaked 6 hours
2 tablespoons coconut nectar
4 teaspoons coconut oil (measure solid then melt)
1 teaspoon vanilla powder
1 teaspon vanilla essence
½ cup almond milk
2 tablespoons raw cacao powder
zest of ½ orange
squeeze of orange juice
